Ingredients

  • 1/2 head green cabbage, thinly shredded
  • 2 carrots, grated
  • 1/2 cup mayonnaise (or aioli → foundation)
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • 1 tsp celery seed
  • Salt, pepper

Method

  1. Toss cabbage and carrots with all dressing ingredients.
  2. Refrigerate at least 30 min — the salt draws out moisture from the cabbage, which thins the dressing to the right consistency.
  3. Adjust seasoning before serving.
