Ingredients

  • 4 ears corn, husked
  • 2 tbsp mayo
  • 2 tbsp sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 tsp chili powder
  • Juice of 1 lime
  • Fresh cilantro

Method

  1. Grill corn over medium-high 8–10 min, turning, until charred all around.

  2. Mix mayo and sour cream. Brush onto hot corn.

  3. Roll in cotija cheese. Dust with chili powder. Squeeze lime. Garnish with cilantro.

What You're Practicing

  • The mayo acts as glue for the cheese and spices.
  • Cotija is a salty, crumbly Mexican cheese — feta works as a substitute.
