Aromatic North African stew with olives, preserved lemons, and warm spices.

Ingredients

  • 8 chicken thighs, bone-in
  • 1 onion, grated
  • 3 garlic cloves
  • 1 tsp ginger, grated
  • 1 tsp cumin, 1 tsp coriander, 1/2 tsp turmeric, 1/2 tsp cinnamon
  • 1 preserved lemon, pulp discarded, rind sliced
  • 1/2 cup green olives
  • 1 cup chicken stock
  • Fresh cilantro, couscous for serving

Method

  1. Season chicken with spices, salt. Brown skin-side down 5 min.

  2. Add onion, garlic, ginger. Cook 3 min.

  3. Add stock, preserved lemon, olives. Cover, simmer 40 min until chicken is tender.

  4. Serve over couscous with cilantro.

What You're Practicing

  • Preserved lemons are lemons cured in salt for weeks — they have an intense, floral, salty flavor unlike anything else.
  • If you can''t find preserved lemons, use lemon zest + extra salt as a rough substitute.
