Ingredients
- 8 chicken thighs, bone-in
- 1 onion, grated
- 3 garlic cloves
- 1 tsp ginger, grated
- 1 tsp cumin, 1 tsp coriander, 1/2 tsp turmeric, 1/2 tsp cinnamon
- 1 preserved lemon, pulp discarded, rind sliced
- 1/2 cup green olives
- 1 cup chicken stock
- Fresh cilantro, couscous for serving
Method

Season chicken with spices, salt. Brown skin-side down 5 min.

Add onion, garlic, ginger. Cook 3 min.

Add stock, preserved lemon, olives. Cover, simmer 40 min until chicken is tender.

Serve over couscous with cilantro.
