Ingredients

  • 2 racks baby back ribs
  • Dry rub: 2 tbsp brown sugar, 1 tbsp paprika, 1 tbsp garlic powder, 1 tsp onion powder, 1 tsp cumin, salt, pepper, 1/2 tsp cayenne
  • 1 cup BBQ sauce

Method

  1. Remove membrane from back of ribs (essential — it''s tough and chewy).

  2. Rub generously with spice mix. Wrap tightly in foil.

  3. Bake 275°F for 2.5 hours (low and slow in foil = steam tender).

  4. Unwrap. Brush with BBQ sauce. Broil 3-5 min until sticky and caramelized.
