Ingredients

  • 4 ripe tomatoes, cut into wedges
  • 1 cucumber, chunked
  • 1 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 4 oz feta cheese, sliced into a slab
  • 1 green bell pepper, sliced
  • Dried oregano
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt

Method

  1. Arrange tomatoes, cucumber, onion, pepper, and olives on a platter.

  2. Place feta slab on top. Sprinkle with oregano.

  3. Drizzle with olive oil and vinegar. Season with salt.
