Ingredients

  • 1.5 lbs boneless chicken thighs
  • Salt, pepper
  • 1 tbsp oil
  • Teriyaki sauce: 1/4 cup soy sauce + 2 tbsp mirin + 2 tbsp sake (or white wine) + 2 tbsp sugar + 1 tsp ginger, grated
  • Sesame seeds, scallions, rice for serving

Method

  1. Season chicken. Sear in oil over medium-high 5 min per side until golden.

  2. Mix sauce ingredients. Pour into pan. Simmer 3–4 min, flipping chicken, until sauce is thick and glossy.

  3. Slice. Serve over rice with sauce spooned over. Garnish with sesame seeds and scallions.
