Ingredients
- 2 lbs potatoes, cut into 1" cubes
- Oil for frying
- Bravas sauce: 1 tbsp olive oil, 2 garlic cloves, 1 tsp smoked paprika, 1/2 tsp cayenne, 1 can (14 oz) crushed tomatoes, 1 tsp sugar, salt
- Aioli (→ foundation) or garlic mayo
Method

Fry potatoes at 325°F for 5 min (blanch). Drain. Fry again at 375°F until golden and crispy.

Bravas sauce: sauté garlic 30 sec. Add paprika, cayenne — 15 sec. Add tomatoes, sugar, salt. Simmer 10 min. Blend smooth.

Pile potatoes on a plate. Drizzle bravas sauce and aioli over the top.
