Ingredients

  • 1 lb shrimp, peeled
  • 3 cups day-old rice
  • 2 eggs, beaten
  • 1 cup peas and carrots
  • 3 scallions, sliced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp oil

Method

  1. Sear shrimp 1.5 min per side. Remove.

  2. Scramble eggs, break up, remove.

  3. Stir-fry vegetables 1 min. Add garlic.

  4. Add rice, sear and toss. Add soy sauce, sesame oil.

  5. Return shrimp and eggs. Toss. Garnish with scallions.

  • Day-old rice is essential — fresh rice steams instead of searing.
  • Cook each component separately, combine at the end.
