Ingredients
- 1 lb shrimp, peeled
- 3 cups day-old rice
- 2 eggs, beaten
- 1 cup peas and carrots
- 3 scallions, sliced
- 3 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp oil
Method

Sear shrimp 1.5 min per side. Remove.

Scramble eggs, break up, remove.

Stir-fry vegetables 1 min. Add garlic.

Add rice, sear and toss. Add soy sauce, sesame oil.

Return shrimp and eggs. Toss. Garnish with scallions.
