Ingredients

  • 2 cups diced cooked pork (leftover roast, tenderloin, or chops)
  • 3 cups day-old rice
  • 2 eggs
  • 1 cup peas and carrots
  • 3 scallions
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp oil

Method

  1. Scramble eggs, remove. Sear pork 2 min. Add vegetables 1 min.

  2. Add rice, sear and toss. Add soy sauce, sesame oil.

  3. Return eggs. Toss. Garnish with scallions.
