Ingredients
- 2 cups diced cooked pork (leftover roast, tenderloin, or chops)
- 3 cups day-old rice
- 2 eggs
- 1 cup peas and carrots
- 3 scallions
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp oil
Method

Scramble eggs, remove. Sear pork 2 min. Add vegetables 1 min.

Add rice, sear and toss. Add soy sauce, sesame oil.

Return eggs. Toss. Garnish with scallions.
