Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • Juice and zest of 1 lemon
  • 1 tsp dried oregano
  • Salt, pepper
  • Fresh parsley

Method

  1. Preheat oven to 425°F.

  2. Pound breasts to even 3/4-inch thickness.

  3. Toss with oil, garlic, lemon juice, zest, oregano, salt, pepper.

  4. Roast 18–22 min until 160°F internal. Rest 5 min.

  5. Garnish with parsley.
