Glazed salmon with a homemade teriyaki that beats any bottle.

Ingredients

  • 4 salmon fillets
  • Teriyaki: 1/4 cup soy sauce, 2 tbsp mirin, 2 tbsp sake, 2 tbsp sugar
  • 1 tbsp oil
  • Sesame seeds, scallions, rice

Method

  1. Sear salmon skin-side up 3 min. Flip.

  2. Pour teriyaki sauce into pan. Simmer 3 min, basting salmon as sauce thickens into a glaze.

  3. Serve over rice. Spoon remaining glaze over. Garnish with sesame seeds and scallions.

What You're Practicing

  • Homemade teriyaki takes 2 minutes and is infinitely better than bottled.
  • The sauce reduces into a glaze — keep basting to build layers.
