Ingredients

  • 2 cups cabbage, finely shredded
  • 1/2 cup flour
  • 2 eggs
  • 1/4 cup dashi or water
  • 4 strips bacon or thinly sliced pork belly
  • Toppings: okonomiyaki sauce (or mix ketchup + Worcestershire), Japanese mayo, bonito flakes, nori flakes, pickled ginger

Method

  1. Mix flour, eggs, dashi into a batter. Fold in cabbage.

  2. Pour half the batter into an oiled skillet. Lay bacon strips on top. Cook 4 min until bottom is golden.

  3. Flip carefully. Cook 4 min more.

  4. Top with okonomiyaki sauce, mayo (in zigzag lines), bonito flakes, nori.
