Honey-Soy Glazed Salmon — Seafood — recipe plated and ready to serve

Ingredients

  • 4 salmon fillets, 6 oz each, skin-on
  • Salt, pepper

Glaze

  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated

Steamed rice, sesame seeds, scallions for serving

Method

  1. Make glaze: Whisk soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  2. Sear salmon: Pat fillets dry. Season with salt and pepper. Heat oil in a skillet over medium-high. Place skin-side up, sear 3 min until golden. Flip to skin-side down.
  3. Glaze: Pour glaze into the pan around the salmon. Reduce heat to medium. Cook 3–4 min, spooning glaze over the fillets as it thickens and becomes syrupy.
  4. Serve over rice. Spoon remaining glaze over. Garnish with sesame seeds and scallions.

What You're Practicing

  • Glazing in the pan: the sugars in honey caramelize and create a lacquered finish
  • Basting with the reducing glaze — same concept as butter-basting a steak
  • Balancing sweet (honey), salty (soy), and acid (vinegar) in a single sauce
