Ingredients

  • 1.5 lbs cod or halibut, cut into 2-inch pieces
  • 1 can (14 oz) coconut milk
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp fish sauce
  • Juice of 1 lime
  • Fresh cilantro, rice for serving

Method

  1. Sauté onion 4 min. Add garlic, ginger, curry powder — 1 min.

  2. Add coconut milk and tomatoes. Simmer 10 min.

  3. Add fish pieces. Simmer 5–7 min until fish flakes.

  4. Add fish sauce and lime juice. Serve over rice with cilantro.

What You're Practicing

  • Add fish at the end — it cooks quickly and falls apart if overcooked.
  • Fish sauce adds umami depth without making it taste fishy.
