Ingredients

  • 1 lb salmon fillet, cubed
  • 3 medium potatoes, diced
  • 1 leek, sliced
  • 2 carrots, diced
  • 3 cups fish stock or water
  • 1 cup heavy cream
  • 3 tbsp fresh dill
  • 1 tbsp butter
  • Salt, white pepper

Method

  1. Melt butter, sauté leek 3 min. Add potatoes, carrots, stock. Simmer 15 min until potatoes are tender.

  2. Add salmon cubes. Simmer 5 min (don''t overcook).

  3. Stir in cream and dill. Season with salt and white pepper.

  4. Serve with dark bread.
