A creamy, dill-scented salmon and potato soup — Finland''s comfort food.
Ingredients
- 1 lb salmon fillet, cubed
- 3 medium potatoes, diced
- 1 leek, sliced
- 2 carrots, diced
- 3 cups fish stock or water
- 1 cup heavy cream
- 3 tbsp fresh dill
- 1 tbsp butter
- Salt, white pepper
Method

Melt butter, sauté leek 3 min. Add potatoes, carrots, stock. Simmer 15 min until potatoes are tender.

Add salmon cubes. Simmer 5 min (don''t overcook).

Stir in cream and dill. Season with salt and white pepper.

Serve with dark bread.
