Grilled marinated chicken skewers with creamy peanut dipping sauce.
Ingredients
- 1.5 lbs chicken thighs, cut into strips
- Marinade: 2 tbsp soy sauce, 1 tbsp curry powder, 1 tbsp coconut milk, 1 tsp turmeric
- Peanut sauce: 1/2 cup peanut butter, 2 tbsp soy sauce, 1 tbsp lime juice, 1 tbsp sriracha, 2 tbsp coconut milk
- Bamboo skewers, soaked
Method

Marinate chicken strips 30 min (or overnight).

Thread onto skewers. Grill over high heat 3 min per side.

Whisk peanut sauce ingredients. Thin with water if needed.

Serve skewers with peanut sauce, cucumber relish, and rice.
