Peru''s Chinese-Peruvian fusion — stir-fried beef with tomatoes, onions, and french fries over rice.
Ingredients
- 1.5 lbs sirloin, cut into strips
- 2 tomatoes, cut into wedges
- 1 red onion, sliced into wedges
- 2 tbsp soy sauce
- 1 tbsp red wine vinegar
- 1 aji amarillo paste (or 1 jalapeño)
- French fries (frozen or homemade)
- Rice, cilantro
Method

Sear beef strips in smoking hot wok 1 min. Remove.

Stir-fry onion 1 min. Add tomatoes, 30 sec (they should stay firm).

Return beef. Add soy sauce, vinegar, aji amarillo. Toss 30 sec.

Toss in french fries. Serve immediately over rice with cilantro.
