Peru''s Chinese-Peruvian fusion — stir-fried beef with tomatoes, onions, and french fries over rice.

Ingredients

  • 1.5 lbs sirloin, cut into strips
  • 2 tomatoes, cut into wedges
  • 1 red onion, sliced into wedges
  • 2 tbsp soy sauce
  • 1 tbsp red wine vinegar
  • 1 aji amarillo paste (or 1 jalapeño)
  • French fries (frozen or homemade)
  • Rice, cilantro

Method

  1. Sear beef strips in smoking hot wok 1 min. Remove.

  2. Stir-fry onion 1 min. Add tomatoes, 30 sec (they should stay firm).

  3. Return beef. Add soy sauce, vinegar, aji amarillo. Toss 30 sec.

  4. Toss in french fries. Serve immediately over rice with cilantro.
