Ingredients

  • 1.5 lbs flank steak, sliced thin against the grain
  • 1 tbsp cornstarch + 1 tbsp soy sauce (for velveting)
  • 4 cups broccoli florets
  • 2 tbsp oil
  • 3 garlic cloves, minced
  • Sauce: 1/4 cup soy sauce + 2 tbsp oyster sauce + 1 tbsp brown sugar + 1 tsp sesame oil + 1 tsp cornstarch + 1/4 cup water
  • Rice for serving

Method

  1. Toss beef with cornstarch and soy sauce. Rest 10 min.

  2. Blanch broccoli 1 min, shock in ice water.

  3. Sear beef in hot wok in batches 1 min per side. Remove.

  4. Stir-fry broccoli 1 min. Add garlic, 30 sec.

  5. Return beef. Add sauce. Toss until thickened. Serve over rice.
