Thailand's national dish — sweet, sour, salty rice noodles with shrimp and peanuts.
Ingredients
- 8 oz flat rice noodles
- 1 lb shrimp, peeled
- 2 eggs, beaten
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 2 tbsp sugar
- 1 cup bean sprouts
- Crushed peanuts, lime, cilantro
Method

Soak noodles in warm water 20 min. Drain.

Whisk tamarind, fish sauce, sugar, soy sauce, sriracha for the sauce.

Sear shrimp in hot wok 1 min per side. Remove.

Scramble eggs 30 sec. Add noodles and sauce, toss 2 min.

Return shrimp, add bean sprouts. Serve with peanuts and lime.
