Thailand's national dish — sweet, sour, salty rice noodles with shrimp and peanuts.

Ingredients

  • 8 oz flat rice noodles
  • 1 lb shrimp, peeled
  • 2 eggs, beaten
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp sugar
  • 1 cup bean sprouts
  • Crushed peanuts, lime, cilantro

Method

  1. Soak noodles in warm water 20 min. Drain.

  2. Whisk tamarind, fish sauce, sugar, soy sauce, sriracha for the sauce.

  3. Sear shrimp in hot wok 1 min per side. Remove.

  4. Scramble eggs 30 sec. Add noodles and sauce, toss 2 min.

  5. Return shrimp, add bean sprouts. Serve with peanuts and lime.
