Light, fluffy fish cakes — a Norwegian comfort food staple.

Ingredients

  • 1 lb white fish (cod or haddock), minced or food-processed
  • 1 egg
  • 2 tbsp cornstarch
  • 1/4 cup cream
  • 1 small onion, grated
  • 1/2 tsp nutmeg
  • Salt, white pepper
  • Butter for frying
  • Serve with: boiled potatoes, white sauce, pickled beets

Method

  1. Pulse fish in food processor until smooth. Add egg, cornstarch, cream, onion, nutmeg, salt, pepper. Pulse until combined.

  2. Form into patties (about 3" diameter, 1/2" thick).

  3. Pan-fry in butter over medium heat 3-4 min per side until golden.

  4. Serve with boiled potatoes, white sauce (béchamel), and pickled beets.
