Ingredients

  • 1.5 lbs flank steak, sliced thin against the grain
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 Asian pear or apple, grated (tenderizer)
  • 1 tbsp oil
  • Rice, kimchi, scallions, sesame seeds for serving

Method

  1. Marinate beef in soy sauce, sugar, sesame oil, garlic, ginger, and grated pear for 30 min (or up to overnight).

  2. Sear beef in batches over high heat 2 min per side.

  3. Serve over rice with kimchi, scallions, sesame seeds.

What You're Practicing

  • Grated Asian pear contains enzymes that tenderize the meat naturally.
  • Slicing against the grain is critical for tender bites.
