Marinated pork skewers with tzatziki, tomato, onion, and warm pita.

Ingredients

  • 1.5 lbs pork shoulder, cut into 1" cubes
  • Marinade: 3 tbsp olive oil, 2 tbsp lemon juice, 2 tsp oregano, 3 garlic cloves, salt, pepper
  • Tzatziki: 1 cup Greek yogurt, 1/2 cucumber grated and squeezed, 1 garlic clove, 1 tbsp lemon juice, dill
  • Warm pita, tomato, red onion, fries (optional)

Method

  1. Marinate pork 1 hour (or overnight). Thread onto skewers.

  2. Grill over high heat 3-4 min per side until charred.

  3. Make tzatziki: combine all ingredients.

  4. Serve in warm pita with tzatziki, tomato, onion. Fries on the side (or inside the pita — the Greek way).

What You're Practicing

  • Pork shoulder is traditional for souvlaki — it has enough fat to stay juicy on the grill.
  • Putting fries inside the pita wrap is the authentic Greek street food move.
