Crispy pork pieces in a vibrant sweet-and-sour sauce with pineapple and peppers.
Ingredients
- 1.5 lbs pork loin, cut into 1" cubes
- 1/2 cup cornstarch
- Oil for frying
- 1 red bell pepper, chunks
- 1 green bell pepper, chunks
- 1 cup pineapple chunks
- Sauce: 3 tbsp ketchup, 2 tbsp rice vinegar, 2 tbsp sugar, 1 tbsp soy sauce, 1 tsp cornstarch + 2 tbsp water
Method

Toss pork in cornstarch. Fry at 350°F until golden (4 min). Drain.

Stir-fry peppers 2 min. Add pineapple, 1 min.

Add sauce ingredients, simmer until thickened.

Toss in crispy pork. Serve immediately over rice.
