Crispy pork pieces in a vibrant sweet-and-sour sauce with pineapple and peppers.

Ingredients

  • 1.5 lbs pork loin, cut into 1" cubes
  • 1/2 cup cornstarch
  • Oil for frying
  • 1 red bell pepper, chunks
  • 1 green bell pepper, chunks
  • 1 cup pineapple chunks
  • Sauce: 3 tbsp ketchup, 2 tbsp rice vinegar, 2 tbsp sugar, 1 tbsp soy sauce, 1 tsp cornstarch + 2 tbsp water

Method

  1. Toss pork in cornstarch. Fry at 350°F until golden (4 min). Drain.

  2. Stir-fry peppers 2 min. Add pineapple, 1 min.

  3. Add sauce ingredients, simmer until thickened.

  4. Toss in crispy pork. Serve immediately over rice.

What You're Practicing

  • The pork must be added to the sauce at the last second — it loses its crispiness quickly.
  • Real sweet and sour sauce is balanced — not cloyingly sweet like some takeout versions.
