Steam the clams by placing them in a large pot with water and wine. Cover and cook over high heat for 5-8 minutes until the shells open. Remove the clams as they open (discard any that don't). Strain the broth through a fine-mesh strainer lined with cheesecloth to remove any sand. Reserve 2 cups of broth. Chop the clam meat into bite-sized pieces. This fresh clam broth is the foundation of great chowder.

Render the salt pork by cooking the diced pieces in a Dutch oven over medium heat for 6-8 minutes until the fat has rendered and the pork is golden and crispy. Remove the crispy bits (lardons) and set aside for garnish. Leave the rendered fat in the pot.

Add the broth and potatoes by slowly pouring in the reserved clam broth while stirring to prevent lumps. Add the diced potatoes, bay leaf, and thyme. Bring to a simmer and cook for 15-18 minutes until the potatoes are tender. Some of the potato will break down and naturally thicken the chowder — this is desirable.

Add the cream and bring to a gentle simmer (don't boil — boiling cream can curdle). Cook for 5 minutes to let the flavors meld. The chowder should be creamy and rich but still pourable. Season with salt and white pepper — go easy on the salt since the clam broth and salt pork are already salty.

Add the chopped clams off the heat. Stir them in and let the residual heat warm them through for 2 minutes. Overcooked clams are the most common mistake in chowder — they should be tender and briny, not rubbery.

Serve in warm bowls topped with the reserved crispy salt pork lardons and fresh chives. Offer oyster crackers and crusty bread on the side. In New England, chowder is a meal, not a starter — serve it in generous portions with plenty of bread for dunking.

- The most important thing: Steam the clams yourself and use the broth. Canned clams make acceptable chowder; fresh clams make extraordinary chowder. The broth from steaming is liquid gold — concentrated clam flavor that no amount of bottled clam juice can match.
- Use salt pork, not bacon, for the most traditional flavor. Salt pork renders clean, porky fat without the smokiness of bacon. If using bacon, choose a mild, unsmoked variety.
- Add the chopped clams at the very end, off the heat. Clams toughen and turn rubbery when overcooked. They only need to warm through in the hot chowder — 2 minutes max.
- The chowder should be creamy but not thick like paste. It should coat the back of a spoon but still flow freely. If it's too thick, thin with a splash of clam broth.
- New England chowder is NEVER red. That's Manhattan chowder (tomato-based). In Boston, suggesting tomatoes in chowder is grounds for exile.
