Ingredients
- 1 lb mixed mushrooms (cremini, shiitake, oyster), sliced
- 2 tbsp butter
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tbsp fresh thyme
- Salt, pepper
- Splash of sherry or white wine (optional)
Method

Heat oil and butter over medium-high. Add mushrooms in a single layer — don't crowd.

Cook without stirring 3–4 min until golden on the bottom. Toss, cook 3 min more.

Add garlic and thyme, 30 sec. Deglaze with sherry if using. Season.
What You're Practicing
- The #1 mushroom mistake: crowding the pan. Mushrooms release water — if crowded, they steam instead of brown.
- Don't stir for the first 3–4 min. Let them develop color.
