Ingredients

  • 1 lb mixed mushrooms (cremini, shiitake, oyster), sliced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp fresh thyme
  • Salt, pepper
  • Splash of sherry or white wine (optional)

Method

  1. Heat oil and butter over medium-high. Add mushrooms in a single layer — don't crowd.

  2. Cook without stirring 3–4 min until golden on the bottom. Toss, cook 3 min more.

  3. Add garlic and thyme, 30 sec. Deglaze with sherry if using. Season.

What You're Practicing

  • The #1 mushroom mistake: crowding the pan. Mushrooms release water — if crowded, they steam instead of brown.
  • Don't stir for the first 3–4 min. Let them develop color.
