Ingredients

  • 2 NY strip steaks, 1.5 inch thick
  • Salt, pepper
  • 2 tbsp oil
  • 2 tbsp butter
  • 2 garlic cloves, crushed
  • Thyme sprigs
  • Fries: 2 lbs russet potatoes, cut into 1/3-inch sticks, oil for frying
  • Dijon mustard, flaky salt

Method

  1. Fries: Soak cut potatoes in cold water 30 min. Dry thoroughly. Fry at 325°F for 5 min (blanch). Drain. Fry again at 375°F for 3 min until golden. Salt immediately.

  2. Steak: Pat dry, season generously. Sear in oil over high heat 4 min per side. Add butter, garlic, thyme. Baste 1 min. Rest 8 min.

  3. Serve steak sliced alongside fries with Dijon mustard.
