Thinly sliced beef with melted cheese on a hoagie roll — Philadelphia''s pride.

Ingredients

  • 1.5 lbs ribeye, frozen 30 min then sliced paper-thin
  • 1 onion, sliced
  • 8 oz provolone or Cheez Whiz
  • 4 hoagie rolls, split
  • 2 tbsp oil
  • Salt, pepper
  • Optional: sautéed peppers, mushrooms

Method

  1. Heat oil on a flat griddle or large skillet over high heat.

  2. Cook onions 4 min until softened. Push to the side.

  3. Add beef slices in a thin layer. Season. Cook 1-2 min, chop with spatula.

  4. Divide into 4 portions on the griddle. Top each with cheese. Cover briefly to melt.

  5. Scoop into split hoagie rolls.

What You're Practicing

  • Freezing the ribeye for 30 min makes it firm enough to slice paper-thin.
  • The debate: Cheez Whiz (Pat''s) vs. provolone (Geno''s). Both are correct. Choose your side.
