Thinly sliced beef with melted cheese on a hoagie roll — Philadelphia''s pride.
Ingredients
- 1.5 lbs ribeye, frozen 30 min then sliced paper-thin
- 1 onion, sliced
- 8 oz provolone or Cheez Whiz
- 4 hoagie rolls, split
- 2 tbsp oil
- Salt, pepper
- Optional: sautéed peppers, mushrooms
Method
-
Heat oil on a flat griddle or large skillet over high heat.
-
Cook onions 4 min until softened. Push to the side.
-
Add beef slices in a thin layer. Season. Cook 1-2 min, chop with spatula.
-
Divide into 4 portions on the griddle. Top each with cheese. Cover briefly to melt.
-
Scoop into split hoagie rolls.
What You're Practicing
- Freezing the ribeye for 30 min makes it firm enough to slice paper-thin.
- The debate: Cheez Whiz (Pat''s) vs. provolone (Geno''s). Both are correct. Choose your side.
