Simple, authentic street tacos — grilled steak on warm corn tortillas with onion, cilantro, and lime.

Ingredients

  • 1.5 lbs flank or skirt steak
  • Marinade: 1/4 cup lime juice, 2 tbsp oil, 4 garlic cloves, 1 tsp cumin, salt, pepper
  • 12 small corn tortillas
  • Diced white onion, fresh cilantro, lime wedges
  • Salsa verde or salsa roja

Method

  1. Marinate steak 30 min to 4 hours.

  2. Grill over high heat 4-5 min per side for medium-rare. Rest 10 min.

  3. Slice against the grain into thin strips.

  4. Warm tortillas on the grill 30 sec per side.

  5. Assemble: double-stacked tortillas, carne asada, onion, cilantro, squeeze of lime, salsa.

What You're Practicing

  • Double-stacking tortillas is the street taco way — the inner tortilla catches the juices.
  • Slicing against the grain is critical for tender bites — flank and skirt have long, tough fibers.
