Ingredients

  • 8 lamb loin chops
  • Salt, pepper
  • 2 tbsp oil
  • Mint chimichurri: 1 cup mint + 1/2 cup parsley + 2 garlic cloves + 1/4 cup red wine vinegar + 1/2 cup olive oil + salt

Method

  1. Make chimichurri: pulse herbs, garlic, vinegar in food processor. Stir in oil and salt.

  2. Season lamb chops. Sear in hot oil 3 min per side for medium-rare (130°F). Rest 5 min.

  3. Serve with chimichurri spooned over.
