Jamaica''s celebration dish — tender goat slow-cooked in a fragrant curry.

Ingredients

  • 3 lbs goat meat (or lamb shoulder), cubed
  • 3 tbsp Jamaican curry powder
  • 1 onion, diced
  • 4 garlic cloves
  • 1 tbsp ginger, grated
  • 2 scallions
  • 2 potatoes, cubed
  • 1 scotch bonnet pepper, whole
  • 2 cups water or stock
  • 2 tbsp oil, salt

Method

  1. Season goat with curry powder, garlic, ginger, salt. Marinate 1 hour (or overnight).

  2. Brown meat in oil in batches. Remove.

  3. Sauté onion 4 min. Return meat. Add water, scallions, scotch bonnet.

  4. Simmer covered 1.5-2 hours until tender. Add potatoes in last 30 min.

  5. Serve with rice and peas.

What You're Practicing

  • Goat is traditional but lamb shoulder is an excellent substitute.
  • The whole scotch bonnet adds flavor without overwhelming heat — don''t pierce it.
