Jamaica''s celebration dish — tender goat slow-cooked in a fragrant curry.
Ingredients
- 3 lbs goat meat (or lamb shoulder), cubed
- 3 tbsp Jamaican curry powder
- 1 onion, diced
- 4 garlic cloves
- 1 tbsp ginger, grated
- 2 scallions
- 2 potatoes, cubed
- 1 scotch bonnet pepper, whole
- 2 cups water or stock
- 2 tbsp oil, salt
Method

Season goat with curry powder, garlic, ginger, salt. Marinate 1 hour (or overnight).

Brown meat in oil in batches. Remove.

Sauté onion 4 min. Return meat. Add water, scallions, scotch bonnet.

Simmer covered 1.5-2 hours until tender. Add potatoes in last 30 min.

Serve with rice and peas.
What You're Practicing
- Goat is traditional but lamb shoulder is an excellent substitute.
- The whole scotch bonnet adds flavor without overwhelming heat — don''t pierce it.
