Ingredients

  • 2 cups grated zucchini, squeezed dry
  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 1/3 cup oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup walnuts (optional)

Method

  1. Squeeze grated zucchini in a towel to remove excess moisture.

  2. Whisk oil, sugar, eggs, vanilla. Add zucchini.

  3. Fold in flour, baking soda, cinnamon, salt. Add walnuts.

  4. Pour into greased loaf pan. Bake 350°F for 55–60 min.
