Ingredients
- 2 cups grated zucchini, squeezed dry
- 1.5 cups all-purpose flour
- 1 cup sugar
- 1/3 cup oil
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup walnuts (optional)
Method

Squeeze grated zucchini in a towel to remove excess moisture.

Whisk oil, sugar, eggs, vanilla. Add zucchini.

Fold in flour, baking soda, cinnamon, salt. Add walnuts.

Pour into greased loaf pan. Bake 350°F for 55–60 min.
