Ingredients
- 3 very ripe bananas, mashed
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- Pinch of salt
- 1/2 cup walnuts or chocolate chips (optional)
Method
-
Preheat oven to 350°F. Grease a loaf pan.
-
Mash bananas. Mix in melted butter, sugar, egg, vanilla.
-
Fold in flour, baking soda, salt. Don't overmix. Fold in nuts/chips.
-
Pour into pan. Bake 55–65 min until a toothpick comes out clean.
-
Cool in pan 10 min, then turn out onto a rack.
What You're Practicing
- The bananas should be brown and spotty — overripe = more sugar = better flavor.
- Don't overmix — stir until just combined. Overmixing develops gluten and makes it tough.
