Ingredients

  • 3 very ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • Pinch of salt
  • 1/2 cup walnuts or chocolate chips (optional)

Method

  1. Preheat oven to 350°F. Grease a loaf pan.

  2. Mash bananas. Mix in melted butter, sugar, egg, vanilla.

  3. Fold in flour, baking soda, salt. Don't overmix. Fold in nuts/chips.

  4. Pour into pan. Bake 55–65 min until a toothpick comes out clean.

  5. Cool in pan 10 min, then turn out onto a rack.

What You're Practicing

  • The bananas should be brown and spotty — overripe = more sugar = better flavor.
  • Don't overmix — stir until just combined. Overmixing develops gluten and makes it tough.
