The Thanksgiving classic — made from scratch with real mushroom cream sauce.

Ingredients

  • 1.5 lbs green beans, trimmed, blanched 3 min and shocked
  • 8 oz cremini mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp flour
  • 1.5 cups chicken stock
  • 1/2 cup heavy cream
  • 1 tsp soy sauce
  • Salt, pepper
  • Crispy fried onions (store-bought or homemade)

Method

  1. Sauté mushrooms in butter 5 min until golden. Add flour, stir 1 min (blond roux).

  2. Gradually whisk in stock. Add cream and soy sauce. Simmer 5 min until thickened.

  3. Fold in blanched green beans. Transfer to a baking dish.

  4. Top with crispy fried onions.

  5. Bake 375°F for 20 min until bubbling.

What You're Practicing

  • This is béchamel technique from the Foundations — butter + flour + liquid = sauce.
  • Soy sauce adds umami depth without making it taste Asian.
  • Blanching the beans first ensures they're bright green and crisp-tender.
