Ingredients

  • 2 lbs ground beef
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 can (28 oz) crushed tomatoes
  • 2 cans (15 oz) kidney beans, drained
  • 1 cup beef stock
  • Salt, pepper
  • Toppings: sour cream, cheddar, scallions

Method

  1. Brown beef in a Dutch oven, breaking into pieces. Drain excess fat.

  2. Add onion, cook 4 min. Add garlic and spices, stir 1 min.

  3. Add tomatoes, beans, stock. Simmer 40 min.

  4. Season. Serve with toppings.
