Coconut Rice

Ingredients

  • 1.5 cups jasmine rice, rinsed
  • 1 can (14 oz) coconut milk
  • 3/4 cup water
  • 1/2 tsp salt
  • 1 tsp sugar (optional)

Method

  1. Combine: Combine rice, coconut milk, water, salt, and sugar in a pot.

  2. Bring: Bring to a boil, stir once, reduce to lowest heat, cover.

  3. Cook: Cook 15 min. Rest 10 min covered. Fluff.

What You're Practicing

  • Same absorption method as plain rice, but coconut milk replaces most of the water.
  • The fat in coconut milk coats the grains, making them glossy and slightly sticky.
  • Perfect alongside curries, jerk chicken, or any Southeast Asian dish.
