Nestle the chicken thighs back into the pot, skin-side up, with the skin poking above the liquid. This is important — submerged skin gets soggy. The skin should stay above the braising liquid so it can crisp later. Cover and cook at a gentle simmer for 25–30 minutes until the chicken reaches 175°F.

Optional: broil for 2–3 minutes to re-crisp the skin. Remove the lid, transfer the pot to the oven under the broiler, and watch carefully. The skin should blister and turn golden while the sauce bubbles. This step transforms the dish.

- The most important thing: Sear the chicken skin-side down for a full 5–6 minutes without moving it. The skin needs uninterrupted contact with the hot pan to render its fat and turn golden and crispy. Lifting or moving it tears the skin and prevents proper browning.
- After braising, the skin will have softened. For crispy skin, broil the finished dish for 2–3 minutes at the end — the skin re-crisps while the sauce bubbles underneath.
- Bone-in, skin-on thighs are non-negotiable. The bones add gelatin to the braising liquid, and the skin adds fat and flavor. Boneless skinless thighs make a completely different (and inferior) dish.
- The capers and olives add salt and brininess — taste the sauce before adding additional salt. Between the capers, olives, and stock, it may not need any.
- This is a one-pot weeknight braise that takes 45 minutes total. It's the kind of dish that looks and tastes like you spent hours but didn't.
